Papa Brett’s Texas Fudge Cake

All over the great state of Texas you will find this shared at schools, churches, birthday parties, and even funerals. There is just something about cake that makes people happy no matter the circumstances. One form or another of this recipe has been passed down for generations. Tom Brett, the patriarch of the wonderful show the Bretts, was kind enough to share this great sweet treat with us, so we may share with all of you. When this was made and brought into the office, it was a hit! And then it was gone, nary a crumb was left. We cleaned that cake pan quicker than the Roadrunner could escape from Wile E. Coyote.

  1. In a mixing bowl, combine 2 1/4 cups of flour, 2 cups of sugar, and 1/2 tsp of salt.
  2. Bring to a boil, 2 sticks of butter, 4 T of Cocoa, and 1 C of water. Keep stirring so the cocoa doesn't burn.
  3. Pour the combined liquids into the flour mixture. Mix.
  4. Add 2 eggs, 1/2 cup of milk, 1/2 tsp of baking soda, 1/2 tsp baking powder, & 1 tablespoon of Vanilla. Beat well.
  5. Pour combined mixture in 9 x 13 cake pan.
  6. Bake at 375 for 30 minutes.
Frosting
  1. While the cake bakes, bring the top 4 frosting ingredients to a boil.
  2. Remove from Heat. Add in 1 lb of powdered sugar about 1/4 lb at a time.
  3. Beat well and pour over the cake hot out of the oven.
  4. An option that is widely popular is mixing chopped pecans or walnut into the frosting before pouring it on the cake.
